Avocado Summer Salad

Ingredients

1 Can Corn (15 oz), Drained
1 Can Black Beans, (15 oz) Drained
1 Pint Grape Tomatoes, Halved
1 Large Avocado (or 2 Small), Chopped
¼ Onion, Diced
2 T. Olive Oil
1 T. Red Wine Vinegar
3 T. Lime Juice
¼ t. Cayenne Pepper

Medium Mixing Bowl

Directions

Combine all ingredients in mixing bowl. Refrigerate at least one hour. Serve chilled.



Servings: 8

Prep and Cooking Time: 15 minutes prep (plus at least 1 hour chill)
