Goat Cheese Stuffed Chicken
Use a sharp knife to cut a “pocket” into each chicken breast. Coat inside pocket of chicken with pesto.
Stuff 2/3 of the goat cheese and sun-dried tomatoes into the chicken breasts. Close chicken breasts, place in oven-safe dish with sides. Top chicken breasts with remaining cheese and sun-dried tomatoes.
Bake in 350 degree oven for 25-30 minutes, or until chicken no longer has any pink.
*I usually cut my chicken breast in half so the portion is not so large.
Servings: 2 Large Stuffed Chicken Breasts (or 4 Small)
