Remove avocado seed and scoop insides into bowl; mash to desired consistency. Mix in remaining ingredients. Serve promptly with crackers (I like Ritz).
-You want to choose an avocado that is dark on the outside. It should be tender but not squishy. When you cut it open, it should be easy to cut and a light green. Some browning is OK.
-Guacamole browns quickly so make it right before you want to serve it.
-Additional lime juice will keep the guacamole from browning as fast and give it a delicious citrus flavor.
-Cover with cling wrap pressed directly against the guacamole to delay browning.
