Honey Oatmeal Whole Wheat Bread
Directions
Combine oats, salt, olive oil, honey and 1 cup boiling water in large mixing bowl; set aside. Combine ¼ cup warm water and 1 t. honey. Add to yeast in small mixing bowl. Set aside to rise, about 10 minutes. Add yeast mixture to oat mixture. Mix in whole wheat flour. Knead in all-purpose flour a little at a time until dough reaches an elastic but not sticky consistency. Coat large mixing bowl with olive oil. Add dough and cover. Allow to rise until doubled, about 1 hour. Coat bread pan with olive oil. Punch dough down and form into bread loaf. Place in greased loaf pan and set aside to rise uncovered until doubled, about 1 hour. Preheat oven to 350 degrees. Bake loaves 35 minutes, or until golden brown. Notes: *I used quick cooking oats but it shouldn’t matter if you use quick cooking or traditional rolled oats.
