Honey Oatmeal Whole Wheat Bread

Ingredients

¾ C. Oats*
1 t. Salt
3 T. Olive Oil
1/3 C. Honey
1 C. Boiling Water
1 Pkg. Active Dry Yeast
¼ C. Warm Water
1 t. Honey
2 C. Whole Wheat Flour
1 – 1 ¼ C. All-Purpose Flour

Directions

Combine oats, salt, olive oil, honey and 1 cup boiling water in large mixing bowl; set aside. Combine ¼ cup warm water and 1 t. honey. Add to yeast in small mixing bowl. Set aside to rise, about 10 minutes.

Add yeast mixture to oat mixture. Mix in whole wheat flour. Knead in all-purpose flour a little at a time until dough reaches an elastic but not sticky consistency.

Coat large mixing bowl with olive oil. Add dough and cover. Allow to rise until doubled, about 1 hour.

Coat bread pan with olive oil. Punch dough down and form into bread loaf. Place in greased loaf pan and set aside to rise uncovered until doubled, about 1 hour.

Preheat oven to 350 degrees. Bake loaves 35 minutes, or until golden brown.


Notes:

*I used quick cooking oats but it shouldn’t matter if you use quick cooking or traditional rolled oats.


Servings: 1 Loaf

Prep and Cooking Time: 3 hours, 10 minutes (30 minutes prep; 1 hour rise; 5 minutes prep; 1 hour rise; 35 minutes bake)
