Honey Ginger Pinto Beans
Soak beans in water overnight.
Drain beans. In a large pot cover beans with fresh water. Bring to a boil, then lower heat, simmering until beans are tender, about 45 minutes. Drain the beans, saving 2 cups of the cooking liquid.
Preheat oven to 300 degrees.
Put the beans in a large baking dish. Add the meat, onion and garlic.
Combine the saved cooking liquid in a bowl, stirring in the honey, mustard, ginger, and pepper.
Pour the liquid over the beans. Stir and cover. Bake for ~2 ½ hours, or until beans are tender and liquid is absorbed to your liking. If it seems too watery towards the end, remove lid and continue baking.
