Orange Glaze Pea and Tofu
Tofu Mixture: Drain tofu and chop into bite-size pieces. Heat 2 tablespoons oil in medium pan over medium heat; add tofu and sauté 5 minutes.
Sauce: Meanwhile, heat 1 tablespoon oil in small saucepan over medium heat. Sauté onions a couple minutes until slightly tender; add garlic and sauté an additional couple minutes until garlic is golden.
Tofu Mixture: Add peas to tofu mixture and continue to sauté. Stir periodically to prevent tofu from burning.
Sauce: Add orange juice, lemon juice and red pepper flakes to onions. In a small cup or dish, mix cornstarch and water until thoroughly blended. Pour cornstarch mixture into sauce, stirring constantly. Cook until sauce thickens to your likening. Combine with tofu mixture until completely coated.
Serve alone or over rice.
