Spicy Sausage and Pepper Quiche
Directions
Cook sausage according to directions, chop into bit-size pieces. While sausage is cooking, chop your tomato, onion, and green pepper. Preheat oven to 350°F. In medium mixing bowl, beat eggs. Mix in all remaining ingredients. Spoon mixture into pie crust. Cook the quiche about 50 minutes, or until you can “shake” it and it doesn’t jiggle. I usually jiggle the oven door a bit, or the drip pan underneath the quiche, to see if it looks congealed. If the edges start to brown too much, put some foil around the outside of the quiche. Notes: Quiche is a wonderful way to use leftover bits of vegetables from other recipes. Really the only thing that has to stay the same is the eggs, other than that feel free to use any other meat or vegetable you like/have on hand. Just google quiche recipes and you'll get tons of ideas.
