Summer Strawberry Salad
Combine spinach and lettuce. Top with strawberries, feta, olive oil, balsamic vinegar, and pepper. (And cucumbers or green pepper if you're adding them.) Toss and serve.
*This is what I had on hand but any leafy green will do. I really like to combine spinach and arugula or spinach and red tip lettuce.
**It may sound weird (there was skepticism in my household), but the flavored balsamic vinegars are delicious on their own. I like to use a fruity flavored balsamic vinegar, mixed with a little extra virgin olive oil, as a salad dressing. It makes a light and tasty salad dressing – and good for you! I bought mine at The House of Olives in Huntersville (NC), but I’m sure there are other places to purchase something similar.
This is your salad, so of course make it any way you want. I also like to add sliced cucumbers and green peppers to my salads when I have them around.
