Tangy Black Bean and Feta Salad
Directions
If using dried beans: Soak beans overnight and cook according to directions. Chop green pepper, cucumber, and onion. Half tomatoes. Combine all in mixing bowl. Toss with olive oil, vinegar, and pepper. Add in feta cheese. Allow to cool and marinate at least an hour before serving. Serve cold. Notes: The amount of oil and vinegar depends on how tangy you want your dish. Add one tablespoon at a time until you reach the taste you want.
