Tomato Zucchini Wraps
½ Zucchini Squash, Chopped
½ Red Pepper, Chopped
2 Tomatoes, Chopped
6 Basil Leaves, Chopped
4 Oregano Leaves, Chopped
½ Pkg. (5 oz.) Frozen Chopped Spinach
½ C. Feta Cheese
2 T. Butter
¼ C. Flour
1 C. Milk, Room Temperature
4 oz. Extra Sharp Cheddar Cheese, Sliced

Large Casserole Dish
Heat oil over medium heat in medium saucepan; sauté squash and red pepper several minutes until tender.
Meanwhile, heat butter in small saucepan over medium heat. Add flour; stir to make paste. Add milk; stir constantly until sauce thickens. Stir in pepper and cheese until cheese melts. Remove from heat and set aside.
Once squash and red pepper are tender, add tomatoes, basil, oregano, and spinach. Sauté a few minutes.
Preheat oven to 350 degrees. Add feta cheese to zucchini mixture; roll into wraps and place in casserole dish. Pour cheese sauce over wraps. Cook until bubbly and crisp, about 30 minutes.
